Thanksgiving- the days of cinnamon and nutmeg, pumpkins and squash, and basically over eating (in America, at least).
Have no fear- I’m here with this beautiful Vegan, GF, Raw Pumpkin Pie that you can enjoy guilt free, and impress your parents-in-law with.
I made it for my family in South Africa (notorious for there meaty Braai’s and full cream everything), and it was nearly wiped clean. GREAT SUCCESS. (But also sad cause less for me 😞).
For the Crust:
Blend in Food Processor until binded, and mold into a well (coconut) oiled pan.
OPTIONAL: baked for 10 minutes at 395F or set in fridge for Raw version of Pie.
For the Filling :
Blend until smooth, lather on top the crust.
Either bake the pie for 15 mins at 395 F, or let it set in the fridge for a couple hours to serve it raw.
Top with coconut cream, ice cream, Greek yogurt- you name it!
